Crock-Pot Roast Beef
We know making Roast Beef may seem intimidat ing, but when you use a Crock-Pot and follow our straightforward recipe, you'll have a delicious roast on your table in no time! We love adding hearty vegetables like potato, carrot and onion, but feel free to add your own twists with things like parsnips, celery or even cabbage. Also, it may seem like a lot of Worcestershire sauce but we promise that it lends a deep, rich umami flavor to the roast that will make a huge difference.

INGREDIENTS
1 3-lb. bone-in roast beef
6 russet potatoes, cut into large chunks 1 large onion, quartered
6 carrots, peeled and cut into 2" pieces 1 tbsp. fresh thyme
1 tbsp. fresh rosemary
3 c. low-sodium beef broth 2 tbsp. Worcestershire
DIRECTIONS
In a large slow cooker, place roast beef. Surround your roast with potatoes, onions, carrots, and herbs. Pour over beef broth and Worcestershire.
Cover and cook on high, 5 hours, or low, 8 hours.
Remove from slow cooker and let rest, then slice and serve with vegetables
