Ingredients
• 4 large russet potatoes, washed
• 3 tablespoons butter, melted
• 1-2 teaspoons kosher salt
• 1-2 cups cheddar cheese, shredded
• 4-7 slices bacon, cooked and crumbled
• green onions, optional, sliced, to taste
• sour cream, optional
Directions
Step 1: Preheat the oven to 400 degrees F.
Step 2: Cover a baking sheet with foil and spray with nonstick spray.
Step 3: Cut the ends off of the potatoes and discard them.
Step 4: Slice the potatoes into 1/2-inch slices.
Step 5: Brush both sides of the potato slices with butter and sprinkle with salt.
Step 6: Place the potatoes on the prepared baking sheet in a single layer and bake until fork-tender, about 30 minutes. Flip the potato slices halfway through baking.
Step 7: Top the slices with cheese, bacon, and green onions.
Step 8: Return the slices to the oven and bake until the cheese is bubbly, for about 3-5 minutes.
Step 9: Top with sour cream and more green onions and serve.
